After significant research to create a foundation of excellence, the trees are Italian varieties chosen primarily for cold hardiness and procured from a nursery in California. The first harvest, as well as succeeding ones, were an incredible success resulting in a product with exceptionally high levels of polyphenols and low acidity that sold out within minutes to award winning restaurants across the country and the general public alike. An executive chef from Toronto was quoted as saying in the National Post that the results were ‘...probably the most unique Olive Oil I have ever tasted.
